Raw Tomato and Carrot Soup

- 3 cups of water
- 1 tomato
- 3 large carrots
- 1 apple with the core removed
- 1 avocado with the pit and skin removed
- Fresh ginger – just a small piece, the size of your finger tip
- 1 can of coconut milk
- Combine all the ingredients in a food processor or high powered blender, and blend until smooth.
- Serve with a basil leaf garnish.
