Ingredients
  • 1 cup of Quinoa
  • 1 cup of soy yogurt
  • 1 apple - cut into 1-inch (2.5 cm) cubes
  • 1 avocado - cut into 1-inch (2.5 cm) cubes
  • 2 tbsp of nutritional yeast (optional)
  • 2 tbsp of olive oil (or other oil)
  • 1 tbsp of sea salt
  • 1 tbsp of curry powder
  • 1 tsp of ginger powder
  • 1 tbsp of white pepper
  • 1 tsp of dried dill
Instructions
  1. Rinse the Quinoa
  2. Soak for 10 minutes, then rinse again and add to 2 .5 cups boiling water
  3. Reduce the heat and simmer for 10-15 minutes (until all the water has been absorbed)
  4. Transfer the Quinoa to a large bowl and mix in the rest of the ingredients
  5. Serve immediately or refrigerate for up to 24 hours
