Lentil Salad with Spinach and Rice

- 1 can of red lentils
- ¼ cup of cooked brown rice
- ¼ cup of sesame seed oil
- ⅓ cup of raw baby spinach
- ½ cup of chopped raw green beans
- ½ cup of chopped zucchini
- Juice from ½ a lemon
- 1 large chopped mint leaf
- 10 chopped mushrooms – with the stems removed
- 1 minced garlic clove
- 1 tsp of cumin powder
- Drain and rinse the lentils
- Mix in the remaining ingredients and serve chilled
