  • Non-stick vegetable oil spray
  • 2 cups of shelled pepitas
  • ⅓ cup of sugar
  • 1 large egg white, beaten until frothy
  • 1 tablespoon of chilli powder
  • ¼ teaspoon of ground cumin
  • 1 teaspoon of ground cinnamon
  • ½ teaspoon of salt
  • ¼ to ½ teaspoon of cayenne pepper
  1. Preheat the oven to 350
  2. Spray the baking sheet with non-stick spray
  3. Mix the pepitas and the other ingredients in medium bowl
  4. Stir in ¼ teaspoon to ½ teaspoon of cayenne pepper, depending on how spicy you like it
  5. Spread the pepitas in a single layer on a baking sheet
  6. Bake until the pepitas are golden and dry, stirring occasionally, for about 15 minutes
  7. Remove from the oven
  8. Separate the petpitas with a fork while still warm
  9. Allow to Cool

Pepitas (pumpkin seeds) are great sources of protein, iron, zinc, manganese, magnesium, phosphorus, copper and potassium. As far as iron goes, 25 grams of pepitas (about a US quarter-cup) can provide over 20 percent of the recommended daily iron intake.
