Serves: 10 - 12
  • 3 pounds (1.4kg) of beef sirloin tip roast, trimmed of all visible fat
  • 4 cloves of garlic, peeled and halved
  • 1 teaspoon coarsely ground black pepper
  1. Preheat the oven to 400 F (200 C).
  2. Secure the roast with cooking twine.
  3. Make 8 (1/2 inch or 1.3cm) slits around the roast, and insert ½ a garlic clove into each slit.
  4. Sprinkle with fresh ground pepper.
  5. Place on a rack in a roasting pan.
  6. Roast in preheated oven for 20 minutes.
  7. Reduce heat to 325 F (ca. 163 C), and insert meat thermometer into roast.
  8. Continue cooking for about 1 hour, or to desired doneness, then remove from the oven.
  9. Loosely cover with foil, and let the roast stand for 15 minutes before slicing.
  10. To serve, slice as thinly as possible against the grain.
