Ingredients
  • 6 cups of baby spinach, rinsed and patted dry
  • 4 tomatoes, sliced
  • 1 English hothouse cucumber, diced
  • 1 red bell pepper, seeded and thinly sliced
  • 8 to 10 radishes, thinly sliced
  • ¼ cup of crumbled feta cheese
  • 1 cup of fat-free vinaigrette / dressing
Instructions
  1. In a large bowl, toss the spinach, tomatoes, cucumber, radishes, feta and red pepper together
  2. Top with your favourite fat-free vinaigrette
