Spinach Feta Salad

While spinach might not be everyone’s favourite green vegetable, it’s no secret that spinach has an incredibly high nutritional value, especially when raw or lightly cooked.
So to ensure you get to enjoy all this nutritional goodness, we’ve got an easy spinach feta salad recipe for you to try.

Recipe
- 6 cups of baby spinach, rinsed and patted dry
- 4 tomatoes, sliced
- 1 English hothouse cucumber, diced
- 1 red bell pepper, seeded and thinly sliced
- 8 to 10 radishes, thinly sliced
- ¼ cup of crumbled feta cheese
- 1 cup of fat-free vinaigrette / dressing
- In a large bowl, toss the spinach, tomatoes, cucumber, radishes, feta and red pepper together
- Top with your favourite fat-free vinaigrette
Not only is spinach rich in antioxidants, but it is also loaded with vitamin A, vitamin B2, vitamin B6, vitamin C, vitamin E, vitamin K, magnesium, manganese, iron, folate, betaine, calcium, potassium, folic acid, copper, protein, phosphorus, zinc, niacin, selenium and omega-3 fatty acids.
