Serves: 4
  • 1 can of red lentils
  • ¼ cup of cooked brown rice
  • ¼ cup of sesame seed oil
  • ⅓ cup of raw baby spinach
  • ½ cup of chopped raw green beans
  • ½ cup of chopped zucchini
  • Juice from ½ a lemon
  • 1 large chopped mint leaf
  • 10 chopped mushrooms – with the stems removed
  • 1 minced garlic clove
  • 1 tsp of cumin powder
  1. Drain and rinse the lentils
  2. Mix in the remaining ingredients and serve chilled
