High Protein Quinoa Salad

Once deemed a sacred crop by the Incas, Quinoa is highly regarded as a valuable source of protein, dietary fibre and other important nutritional elements.
To get a piece of the nutritional goodness Quinoa has to offer, we have a delicious high-protein Quinoa Salad recipe for you to try.
Recipe
- 1 cup of Quinoa
- 1 cup of soy yogurt
- 1 apple - cut into 1-inch (2.5 cm) cubes
- 1 avocado - cut into 1-inch (2.5 cm) cubes
- 2 tbsp of nutritional yeast (optional)
- 2 tbsp of olive oil (or other oil)
- 1 tbsp of sea salt
- 1 tbsp of curry powder
- 1 tsp of ginger powder
- 1 tbsp of white pepper
- 1 tsp of dried dill
- Rinse the Quinoa
- Soak for 10 minutes, then rinse again and add to 2 .5 cups boiling water
- Reduce the heat and simmer for 10-15 minutes (until all the water has been absorbed)
- Transfer the Quinoa to a large bowl and mix in the rest of the ingredients
- Serve immediately or refrigerate for up to 24 hours
Nutritional Value
Quinoa is an excellent source of complete protein according to nutritional evaluations. Additionally, Quinoa is a great source of dietary fibre, phosphorus, magnesium, iron and calcium. Quinoa is also gluten-free and is considered easy to digest.
Thanks to all these characteristics, Quinoa is being considered a possible crop in NASA’s Controlled Ecological Life Support System for long-duration human occupied spaceflights. Plus, the United Nations have declared 2013 the International Year of Quinoa.
